梅村酒家
本地客家餐馆梅村酒家有“四大天王”:梅菜扣肉、算盘子、酿豆腐和盐鸡,这些经典客家菜拥有一批忠实食客,每到餐馆必点。
在梅村酒家能吃到梅州七个区县的代表佳肴:梅州萝卜丸、五华酿豆腐、蕉岭咸菜酒糟及第汤、平远梅菜扣肉、兴宇红焖猪肉、大埔算盘子、丰顺春灌肠,一些不在餐单上的,必须预定。
一般人最熟悉的客家菜就是算盘子,赖法源说,这是因为本地客家人多数来自广东省大埔县,算盘子是大埔县颇负盛名的传统小吃。他家乡在梅县,以萝卜丸知名,由于本地梅县客家人少,因此鲜少见到这道家乡菜。反观印度尼西亚和香港,由于梅县客家人较多,萝卜丸在当地普遍盛行。
始于1983年,梅村酒家是新加坡历史最悠久的客家餐厅。 从那以后它就一直在Jalan Leban的位置,看起来和以前一样。
76岁的老板赖法源在70年代从一位来自香港的客家厨师那里学到了这道菜。 如今,他坚持使用食谱,但简化了厨房流程。 去年,他的儿子吉米辞去了会计工作,加入了他的行列。 “但现在接手还为时过早,因为我还没有学会一切,”这位48岁的吉米说。
餐厅拥有强大的追随者。 “我们经常看到三代人一起吃饭,所以关闭这个地方会很可惜,”吉米说,他承认由于人力紧缩和成本上升,生意变得越来越艰难。 “很难让这个地方保持运转,”他说,并补充说他十几岁的女儿有时会帮忙。 “在某种程度上,这家餐厅也是要传给她的继承权。”
父亲无论如何也没有退休的打算,要教育年轻一代客家饮食文化。 “弘扬客家传统是我父亲的使命,所以我放弃了逼着他退休,”吉米笑着说。 每当他的厨师们度假回国时,他的父亲仍然会从头开始做饭,从一大早起就在厨房里不知疲倦地准备。
春节期间,梅村酒家将推出传统客家盆菜,包括鸭肉、鸡肉、猪蹄、酿豆腐等。 菜单亮点包括标志性的用山药制成的算盘子或算盘子,以及更不常见的萝卜肉末饺子。
为了使业务现代化,吉米正在加强梅村酒家的网站,这样它也可以接受在线订单。 将于农历新年后推出,更新后的网站将使顾客能够在线下订单并在餐厅取餐。
该网站还将成为客家文化的信息来源。 “我父亲曾经开设烹饪班,在那里他会分享食物的历史。所以如果他继续这样做会很好,同时,网上的信息会让更多人对我们的文化感兴趣。

赖法源(75岁)在1983年创办梅村酒家,本着对客家文化的使命感,希望客家菜肴能在本地发扬光大。
谈到经营老餐馆的挑战,赖法源说,不容易请到合适的厨师。本地以粤菜馆和海鲜餐馆居多,很多厨师顾及若学的是客家菜,日后发展有限,因此业界很难培养适合的客家菜厨师。
疫情期间,餐饮业受到很大冲击,不少老字号餐馆因此结业。赖法源庆幸梅村酒家是属于自己的产业,不用承受租金压力,因此无论如何都要将餐馆撑下去,“如果收掉这家餐馆,就无法保留自己的文化,我会很难过。幸好,我们已渡过难关。”

Traditional Hakka food, very good taste. I will recommend, the chicken, 扣肉 and 酿豆腐。The taste very authentic 👍. In the downside, service was not as good. You cannot have too much variance in your order. They cannot cope with that, just only the set will be the best for them. Lastly it gets crowded during peak hours. Also difficult to find parking.

Their services also pretty old school, called multi times to make reservations and they finally picked up and gave me a mobile number to WhatsApp them, and took them many days to confirm the reservations. And seem like they can only take set meal order, took them forever to add dishes.

19/10/2022A quaint-looking diner that has a really nice traditional ambience. Decently priced. The braised pork was my favourite among the ordered dishes, hakka noodles were quite disappointing however. Yam abascus was good.

A very traditional looking shop and my friend commented she felt like shes back home in China. The 梅菜扣肉was really good. Not overly seasoned and jus right with rice. Love the salted chicken, simple but yet can taste the original taste of the dish. The chilli is really good as some reviewers have commented. 算盘子is very unique.. unlike the commercial selling ones that's very chewy, this is slightly more towards sour and also very powdery full of yummy yam rather than flour.

Food is not too salty, unlike many other restaurants. 猪肚 in the 猪肚汤 is super soft. 梅菜扣肉 is soft, fragrant, and you can savour the original taste of 梅菜. 算盘子 is soft and fragrant and not the rubbery kind. Only downside is very hard to find parking nearby.
